Kaakvi or Liquid Jaggery, is the syrup obtained from slow boiling sugarcane juice right before it thickens into jaggery. The least processed natural by-product of raw sugarcane, it’s the most nutritious of sweeteners, abundant in iron and other minerals. With a delicious sweetness, thick consistency and dark arresting colour, it is an ideal substitute for honey or caramelised sugar. Blend it in milkshake, use it to make a sweet or drizzle over pancakes.
